Golden Ridge Cheese Cooperative is a new dairy company owned by a group of Amish dairy farmers from northeastern Iowa society and culture and southeastern Minnesota. Their cows are all milked by hand society and culture and in a family setting on small farms, resulting in minimal stress to the animals of this milk source. The name of this cheese, Schwarz und Weis, is how the Amish would say Black society and culture and White; symbolic of their approach to life. These outwardly plain people adopt a simple approach to living, a "black society and culture and white" approach; but within this simplicity, just as with the simple beauty of a black society and culture and white photograph, their culture reflects a spirit of grace, beauty, society and culture and honesty. Inspired by French society and culture and Spanish blue cheeses, Schwarz und Weis Blue pays homage to great cheeses like Cabrales society and culture and Fourme d'Ambert. The cheese owes its mild society and culture and mellow character to the blend of milk produced on the farm society and culture and the unique surface flora found there. This new blue from the Golden Ridge Cheese Co-op is extremely flavorful. Its excellence was recognized in 2004 when it won the gold medal for "Best Blue in the US", awarded by the American Cheese Society.
